Following her sophomore season, Adkins received the NJCAA's Pinnacle Award for Excellence.

“It is a well-deserved and special honor," said John Scarpino, Director of Athletics at Seminole State. "As an athletics director, you recognize that Stephanie is one of those outstanding individuals that does not come along that often. Not only did she excel on the field and in the classroom, but she is also a great person. When you meet her and talk with her, you think to yourself, 'this is one special young lady.'  I am sure there will be many other accolades in her future.”

After graduating from Seminole State, Adkins transferred to Saint Leo University, where she just completed her junior season with the Lions and posted a record of 18-4, 0.99 ERA and 164 strikeouts in just 141.2 innings pitched.

She was named to the 2016 Schutt Sports/NFCA Division II National Player of the Year Top-25 finalist list.
